Instructions
Preheat & Prep:
Preheat oven to 350°F (175°C).
Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
Make the Crust:

Press evenly into the baking dish.
Bake for 10 minutes, then let cool completely.
Prepare the Cream Cheese Layer:

Spread evenly over the cooled crust.
Make the Coconut-Pineapple Topping:
In another bowl, whisk pudding mix and drained pineapple until smooth.
Stir in shredded coconut and whipped topping.
Spread over the cream cheese layer.
Chill & Serve:
Cover and refrigerate for at least 4 hours (or overnight) to set.
Slice, serve chilled, and enjoy!
