Preparation:
Preparing the potatoes: Grate the raw potatoes into a large bowl. Squeeze them lightly to remove excess water.
Mixing the ingredients: Add the beaten eggs, salt, pepper, and sifted flour. Mix well until you get a smooth dough.
Cooking the fritters: Heat a little oil in a frying pan. Using a tablespoon, take a portion of the dough and shape into patties the size of your palm.
Browning: Cook the fritters for about 3 minutes on each side, until golden brown and crispy.
Draining: Arrange the fritters on paper towels to remove excess oil.
Finishing and enjoying: Sprinkle with freshly chopped chives and serve warm with crème fraîche and a green salad.
