Refreshing Avocado Mousse – Creamy, light and without mystery! Ingredients
600g ripe avocado pulp
1 can (or more) sweetened condensed milk
1 can sour cream
50ml lemon juice
170ml water
1 sachet (12g) colorless and flavorless gelatin
5 tablespoons water (to hydrate the gelatin)
Lemon zest for decoration (optional)
Preparation Hydrate the gelatin with the 5 tablespoons of water and set aside. In a blender, add: avocado, sweetened condensed milk, cream and lemon juice. Blend until smooth. Melt the gelatin in the microwave (15 seconds) or in a bain-marie until liquid and lump-free. Add the melted gelatin and 170ml water to the blender and blend again. Transfer the mixture to a lightly oiled baking dish (optional, for easier removal). Cover with plastic wrap and refrigerate for at least 3 hours (or overnight to firm up). Sprinkle with lemon zest (optional) and serve chilled.
